Claypot Tofu with Seafood
Claypot tofu with seafood is the perfect Chinese-style one-pot casserole when we want to eat a delicious and balanced meal. It has egg tofu, vegetables (snow pea, carrot, baby corn, mushroom) and seafood (scallop, prawn) all in one dish, so all we need is some steamed rice to go with it.
If you don’t have a claypot, you can cook this in a regular pot or wok. I love the claypot because that I can cook and serve the dish directly in it. The claypot retains heat very well so the contents will still be bubbling away when you serve it on the dinner table.
