Stir-fried Sambal Okra (Lady Finger)
Sambal Okra (Lady Finger) Recipe
Stir fry the okra can help to reduce the inherent slimliness of the vegetable.
Ingredients:
- 1 tbsp cooking oil
- 2 cloves garlic minced
- 200 grams okra sliced thinly & diagonally
- 2 tbsp sambal belacan
- 1 tbsp water adjust accordingly
Directions:
- Heat oil in wok. Stir fry garlic until just start to turn light brown.
- Add cut okra and sambal belacan. Stir fry briskly at high heat until the okra is just cooked, about 2 minutes (longer if you slice them thickly), adding water halfway through cooking.

Those okra slices are so beautiful, tender and the sambal must give them a bit of a kick.
So good with steamed rice! I love both stir-fry and steamed versions but most times, I know the “lazy” in me will call for the steamed version.
I love okra, but do not buy often because my husband does not care for it…I like the idea of adding sambal to this stir-fried…delicious looking dish Wiffy.
