Stir-fried Sambal Okra (Lady Finger)

With my stash of no-cook homemade sambal belacan in the fridge, this stir-fried sambal okra is an under 15-minute stir-fry that is sure to please okra (aka lady finger or lady’s fingers) and sambal chilli lovers. I totally love this simple version of spicy okra where I only used sambal belacan and garlic.

You can tweak this recipe by adding shallots or dried shrimps for more savoury deliciousness. But this simple version is meatless, and also satisfies my tummy well :)

Okra is a vegetable which you either love or steer clear of, due to its hairy skin and slimy texture when cut. Fortunately I belong to the okra fan club. One tip to reduce the inherent sliminess is to stir fry it briskly over a high heat wok.

So good with steamed rice! I love both stir-fry and steamed versions but most times, I know the “lazy” in me will call for the steamed version.
I love okra, but do not buy often because my husband does not care for it…I like the idea of adding sambal to this stir-fried…delicious looking dish Wiffy.
