Economical fried bee hoon (经济炒米粉) is a humble local dish particularly popular during breakfast hours. For many locals like me, it is such a nice treat to fuel the day with a carbtastic and filling plate of fried bee hoon topped with various “liao” (“料” meaning “ingredients” in Chinese).
Economical bee hoon can be truly economical with a few simple toppings like cabbage and egg, or it can be quite luxurious with various dishes. This is a simple and fuss-free version I like to cook at home.

In this recipe, my side is stir-fried cabbage, luncheon meat and fried egg. You can vary the side dishes for your economical bee hoon – curry vegetables, sambal long beans, fried chicken, fish cake, hot dog and otak-otak, just to name a few.

I like 经济米粉 – usually I will “order” egg, cabbage, and long beans from the stall. And pickled green chili, to me, is a must :p
