Blueberry Overnight Oats
Blueberries are in season now, so it’s irresistible to make blueberry overnight oats with the abundance of cheap & fresh blueberries at the supermarket.
The basic overnight oats are sweetened with blueberry jam and topped with fresh blueberries. Simple and pretty in blue-purple accents.
In this recipe, blueberry jam is used instead of the usual maple syrup or honey to sweeten the overnight oats. Although the jam I used has no added sugar (see picture above), it is very sweet. So just sweeten the oats to taste with the jam as you normally would with a sweetener. To me, blueberry jam is ideal as it gives a nice colour to the oats, with small bits of blueberry pulp in it. And this is entirely for vanity sake – I mix half the overnight oats with blueberry jam so that the purple hue is more prominent, versus mixing in the jam in all the oats which result in a paler colour. Then layer normal oats with blueberry oats in a serving glass. Top the oats with fresh blueberries to indulge in summer blueberry bliss.
