Pancakes Lunch Box (Keto Pancake Mix)
Happy New Year! How about starting the new year on a clean and healthy mode? This 15-minute pancakes lunch box uses keto-friendly almond flour and is served with blueberries and grapes. Even the pancake syrup used is calorie-free. This lunchbox is great as an all-day breakfast (in fact this was actually for my family member’s night shift dinner). It is just perfect for eating light, healthy and keeping one’s weight in check after all the year end festive feasting.

I used Simple Mills’ Pancake & Waffle Mix in this recipe. I’m using a premix because I am a total noob in making keto-friendly pancakes, so I want to know the taste & texture of pancakes made with almond flour, before I attempt making them from scratch in future. This pancake mix turns out to be tasty and a big convenience.

To make the pancake batter, add pancake mix, an egg and coconut oil (or evoo) to a large bowl. Whisk until well blended.
Heat lightly oiled pancake pan (if you don’t have one, any griddle or pan is just fine). Pour batter onto the hot pan for each pancake. Cook until edges are dry, then turn and brown other side.
I managed to stack 9 pancakes into Ikea’s square lunchbox. Add fruits (blueberries & grapes) along with a calorie-free pancake syrup sauce bottle. As I was afraid that this was not filling enough, I added an apple and a mini chocolate packet drink into the bento bag.
I bought many cute bento bags from Taobao and they arrived just after Christmas, just in time for the new year. This one with the cute cats motif is so cute and fits my Ikea’s lunchbox perfectly :D

p.s Coconut sugar is not keto.
