Avocado Shrimp Pasta
I love avocado pasta. I love pan-seared shrimps. Put these two together and I found a little winner in this avocado shrimp pasta. The flavours are light, fresh and wholesome.

This is downright easy & fast to make since the avocado sauce is non-cooking, and shrimps (prawns) cook really fast on the stove.
Frozen shelled shrimps + quick-cooking angel hair + no-cook avocado sauce makes this a very fast pasta dish to pull off in about 20 minutes flat. It’s about 10-minutes more if you’re using fresh prawns (extra time for peeling & de-veining them).
And this is straight from the pan. I eat it from here when I’m cooking for one ;)

Hi! How long do you keep the avocado sauce? Can they be made in advance and then stored in the fridge?
Cover the avocado sauce with cling wrap, then keep in the fridge for about 1 day. However the avocado may start to brown. The lemon juice helps to delay the browning. I usually add a thin layer extra-virgin olive oil on top of the sauce to slow down the browning.
I must try this for my little one as this is so healthy and we love avocado.
