Apple Pork Ribs Soup

I’ve always love using fruits in cooking and I know I must try out this recipe when I see it. And it turns out to be one of the most tasty and refreshing soup I’ve had! The natural sweetness of the soup is pure bliss… I’ll definitely experiment more with adding apples to soup in future ;p

Recipe from Dinner for the Couple
Apple Soup

Ingredients
(Serves 2-3)

1.5 litres water
200-300g spare ribs or pork shoulder ribs
1 onion, peeled & cut into chunks
4 red apples, cut into pieces
6 red dates
Salt

Directions
Blanch the pork ribs. Boil water in a pot and put in the ribs, onions, apples and red dates. Bring to boil again and turn to low heat. Simmer for 2 hours (I simmered for about an hour and keep it in thermal cooker for a few more hours). Season with salt if required.

    • Hi Momo, the apples you find at our local supermarket are fine. Try to get those unwaxed and less pricey types if you can.

    • I didn’t remove. But then again I’m using unwaxed apples. If your apple is waxed, then it’s to you whether you want to remove. It’s fine to leave them on too I think.
