Chilling Soba Noodles

I love to cook cold noodles at home on busy days because both the sauce and noodles can be prepared in minutes and in advance. This is a truly fuss-free and healthy (oil-free) dish. Many people buy instant soba dipping sauce from the supermarkets and there is nothing wrong with them. In fact they are a great convenience (just need to dilute the concentrated sauce with water). But if you want to make your own sauce, the good news is that it’s super easy. If you are already cooking Japanese food, you probably already own all the ingredients for the dipping sauce in your pantry.
