Peanut Soba Noodles

This is a quick and easy soba (そば buckwheat noodle) recipe for peanut butter lovers. While the soba noodle is cooking (about 3 minutes), you can prepare the no-cook sauce which is made with peanut butter, soba cooking water and simple seasonings.

The peanut soba noodles is nutty, creamy and slightly tangy. It makes a nice carb component in the lunch box, or it can be eaten as a one-dish meal with protein (chicken/fish) or salad vegetables.
This is the home-made peanut sauce, before mixing in with the noodles. I used creamy peanut butter purchased from iherb (← my iherb affliate link ; contains discount code “WIF26″ for 5% off order) pictured above. You can use any favourite supermarket brand of peanut butter, which must be the creamy type, for this recipe.
I could drink that peanut sauce! This is a a quick and delicious lunch.
