Ham & Cheese Egg Sandwich

I have been making packed dinner for my family member who started working the evening shift ad hoc. I don’t have a lot of time to make such packed meals because I work in the mornings and come home by 2 pm, while the packed food has to be ready by 4 pm. Although this ham & cheese egg sandwich was impromptu, it is nevertheless delicious. A sandwich like this is so perfect for packed lunch (or dinner in this case) because it keeps well for a few hours and it is easy to eat.

This ham & cheese egg sandwich is made of scrambled eggs, ham, lettuce, mayonnaise & butter spread, sliced cheddar cheese and sliced wholemeal bread.

In one of the sandwiches, I used leftover braised red wine vinegar coleslaw cabbage which has a lovely purple hue. It adds a nice colour and variety to the sandwich box.

Luncheon Meat (Spam) Egg Sandwich (Step-by-Step)
Wrap each sandwich tightly with cling wrap after assembling them. In place of cling wrap, you can also use food-grade wax paper or parchment paper. They are ready to bring to work.

P.S. this is the cling wrapped version of my luncheon meat egg sandwich. So the bread is of a different colour.

You can go further in the display too. Cut each sandwich in half and fold it apart, filling side up. Place the cut sandwiches still in its cling wrap in a fitting lunch box.

I squeezed in some cherry tomatoes in the gaps and added a cute napkin ^_^ Then I cling wrapped the container before putting the lid on. It was fun making a lunch box!

Simple Ham & Cheese Sandwich Recipe

This ham & cheese egg sandwich lunch box takes 20 minutes to make, keeps well for a few hours and is pretty to look at!

Ingredients:

  • 4 slices cooked deli ham
  • 10g unsalted butter
  • 2 eggs
  • 2 slices bread spread one side of each slice with butter
  • 2 slices bread spread one side of each slice with mayonnaise
  • 2 romaine lettuce leaves OR 2 heaped spoons braised coleslaw salad

You also need:

  • food-grade cling wrap, wax paper or parchment paper

Directions:

  1. Pan fry ham slices. Grease non-stick pan with a few drops of oil, and pan fry ham slices slices on both sides until warmed through and/or lightly browned. Side aside.
  2. Make scrambled eggs. Don’t wash the pan. Grease the pan with 1/2 tsp oil, Add butter and eggs into the pan. Turn on the heat to medium and whisk the eggs in the pan. Scramble the eggs until just set but still moist, taking them off the heat now and then to avoid overcooking the eggs.
  3. Assemble each sandwich in this order: 1 slice of butter-spread bread, 1 slice of ham, 1 lettuce leaf (or 1 spoon cooked coleslaw salad), half the scrambled eggs, 1 slice of ham, 1 sliced cheese and lastly 1 slice of mayo-spread bread.
  4. Wrap each sandwich tightly with cling wrap (or wax/baking paper secured with tape).
  5. For lunch box display, cut each sandwich in half. Fold to display the filling side up and place in a fitting lunch box. If there is small space within the lunch box, you can put small fruits such as cherry tomato or grapes.

Cooking Note(s):

  1. Small variation. I used leftover braised red wine vinegar coleslaw on one of the sandwiches, adding a slight tang and splash of pretty purple to the sandwich.
  2. For healthier choice, I use wholemeal bread and half-calorie mayonnaise.
