PB&J Overnight Oats

PB&J Overnight Oats Recipe

The strawberry jam & fresh strawberries can be substituted with other fruit jam and seasonal fruits.

The basic plain oats keeps well in a covered glass jug in the fridge for up to a week, making it ideal for meal prep.

Ingredients:

(A) Basic Overnight Oats

  • 1/2 cup (50g) rolled oats
  • 1/4 cup (65g) Greek or plain yoghurt
  • 3/4 cup (100ml) unsweetened milk (soy or cow’s milk)
  • 2 tsp chia seeds

(B) Toppings

  • 2 tbsp strawberry jam to taste; reduce if eating low-carb
  • 2 tbsp creamy peanut butter to taste
  • 50 grams fresh hulled strawberries cubed
  • 1 tbsp roasted peanuts or any fave nuts

You Also Need:

  • 1-2 mason jars with lid (or recycled cleaned jam or honey glass jar)

Directions:

  1. Make basic overnight oats. In a glass jug, combine (A), stir to mix well or cover with lid and shake vigorously. Chill in the fridge over night (or at least 6 hours) and keeps up to a week.
  2. When ready to serve, top the oats with (B) in the order they are listed. Before eating, mix everything well so that the oats are evenly sweetened by the jam. Alternatively, mix everything together and serve.
