Heirloom Tomato Chicken Salad Recipe
In this recipe, I used multi-coloured heirloom tomatoes. You can substitute the heirloom tomatoes with any favourite tomato variety.

Ingredients:
- 200g sliced heirloom tomatoes use multi-coloured for added asthetics
- 1 piece cooked, ready-to-eat chicken breast (about 100-150g)
Easy Balsamic Dressing
- 2 tsp balsamic vinegar
- 2 tsp extra-virgin olive oil
- 1/2 tsp honey
- tiny pinch of garlic salt
- 1/8 tsp favourite dried herbs (such as Italian seasoning) optional
Garnish Suggestions
- fresh basil coarsely torn
- freshly chopped spring onions
Directions:
- Arrange sliced tomatoes one layer on the salad plate.
- Place chicken on top of the tomatoes, either served whole or cut into smaller chunks.
- Make salad dressing by shaking the balsamic dressing ingredients in a tightly lid salad dressing container.
- Drizzle the salad dressing over the chicken & tomatoes. Garnish the salad with basil and spring onions. Served at room temperature or chilled.
Cooking Note(s):
- You can add feta cheese cubes and roasted nuts (such as walnuts or pine nuts) as finishing touches to make this salad more sumptuous.
- I had one portion of leftover home-made scallion sauce which I spread it over the chicken breast, but this is optional.

I think the 7-eleven/Family Mart in Taiwan has such ready-to-eat chicken too.
