Hai Di Lao Instant Mala Sauce

This is the “海底捞” (Hai Di Lao) brand of mala sauce (paste) I use for my “mala xiang guo” (spicy numbing stir-fry; 麻辣香锅) recipe.

It tastes great and contains a good amount of Sichuan peppercorns which gives the satisfying numbing (“麻”) kick in the dish. They can be bought at local supermarkets (NTUC & Sheng Siong). Click here for old packaging.

Each packet contains 2 x 110 grams sachets of sauce. I use one sachet each time which is enough for 2-3 persons.

Mala Xiang Guo Recipe
To cook, just fry up some garlic and dried chillis.

Mala Xiang Guo Recipe
Then stir fry the sauce for about a minute or until aromatic.

Mala Xiang Guo Recipe
Add the ingredients and stir-fry until cooked. Season to taste.

  2. May I know the specific brand of glass noodles that you used in your recipe? I can’t seem to find one similar to that of the ones I see at Mala Xiang Guo stalls in Singapore.

    • I’m using Korean glass noodles. They are thicker and more chewy than normal Chinese glass noodles. No specific brand, just look for them at the Korean dried goods section of supermarkets, or a Korean supermarket.

  5. I had this dish using the above sauce. There is a very strong curry taste which is overpowering.
