Cabbage with Dried Shrimps

This is a homely Chinese recipe for cabbage cooked with dried shrimps (蝦米) which I am clearing from the fridge. The dried shrimps add a savoury depth to this homely vegetable side dish.

After cooking, the cabbage is soft & tender. Both cooked cabbage & dried shrimps are great with rice, porridge or bee hoon (rice vermicelli).

There is some sauce in this cabbage dish which is great for drizzling over rice. Compared to my stir-fried cabbage, this cabbage dish is more moist & soft while the stir-fried version (with less liquids used) is more crisp and caramelized. The style of cooking really depends on my mood on the day :)

Cabbage with Dried Shrimps

Variations:

Ingredients:

  • 15g dried shrimps
  • 50 ml hot water
  • 1/4 head (about 350-400g) round cabbage (aka Beijing Cabbage, 高丽菜)
  • half small carrot sliced thinly
  • 1 tbsp cooking oil
  • 4 cloves garlic minced
  • 5 slices ginger minced
  • 1/2 tbsp mushroom seasoning powder (or 1 tsp light soy sauce)
  • 3 dashes white pepper powder
  • 5 drops Maggi seasoning sauce optional
  • 100 ml water add more if needed
  • small pinch of salt to taste

Directions:

  1. Soak dried shrimps in 50 ml hot water until softened. Take out the dried shrimps and pat them dry on paper towels. Reserve dried shrimp soaking liquid.
  2. Prep cabbage while the dried shrimps are soaking. Core the cabbage, and cut them to uniform smaller chunks.
  3. Cook aromatics. Heat oil in wok. Add garlic, ginger and dried shrimps. Stir fry quickly until aromatic.
  4. Cook the cabbage. Add cut cabbage and stir fry until they are withered and shrunk by half in volume. Then add mushroom seasoning powder, white pepper, Maggi seasoning sauce, dried shrimps soaking liquid and the remaining 100 ml water. Simmer until cabbage turns translucent and softened to liking, about 5-8 minutes. Top up with more water if needed during simmering. Season to taste with salt before serving.
