How to Prepare Batang Fish

You can skip the salt massaging step and Chinese wine, if you like the inherent strong taste of batang fish.

Ingredients:

  • 150g batang fish slices skin removed if preferred
  • water
  • 1 tsp fine sea salt
  • 1 tbsp corn starch

Marinade

  • 1 tsp sesame oil
  • 1/2 tsp soy sauce
  • 1/2 tbsp Chinese wine

Directions:

  1. Prep the fish. Place batang fish in a small bowl with enough water to cover the fish. Add sea salt, massaging the fish flesh with the salt for 1 minute. Add cornstarch, stirring to dissolve in the salt water, and let the fish soak for 5 minutes. Rinse the fish in a few changes of water to remove the salt and cornstarch. Drain the fish.
  2. Marinade fish slices with sesame oil, soy sauce and Chinese wine for at least 15 minutes in the fridge. The batang fish is now ready to be used in your recipe(s), where it will retain its soft and smooth texture after cooking.
