I made this green onion shrimp toast with home-grown Japanese spring onions (konegi). It is an extension of my green onion toast with more ingredients. Think of it like a pizza on toast – instead of pizza crust, a luxuriously thick sliced bread is used. My toast had green onions, corn and boiled shrimp (prawn) as the “toppings”. I baked the toast with mayonnaise, butter & shredded pizza cheese in the air fryer for 4 minutes. You can also use the toaster oven or a broiler. The recipe is super fast and instantly hits the savoury spot for me.

First snip the green portion of the green onions into a bowl. I am using home-grown Japanese green onions, so they are slightly thinner than what I bought at the store. Add mayonnaise and corn nibbles to the bowl.

Add cheese, butter and prawns, then mix well.
Make a well in the bread using the back of a spoon or a spatula. Spread the toast filling on the bread and bake it in an air fryer. You can also use a toaster oven. This photo shows the toast before baking.
After only four minutes in the air fryer, my green onion shrimp toast was perfectly baked with melty cheese and slight browning.

In this recipe, I am using Japanese spring (green) onions (konegi/小葱). They are smaller than the regular Japanese negi, and slightly larger than our local spring onions. You can substitute it with any types of green onions, or even use chives. You can also grow them in water – this recipe is made using regrown green onions from the supermarket.
