Luncheon Meat Egg Sandwich

I made a decadently delicious luncheon meat egg sandwich (spam sandwich) earlier in the week. These sandwiches taste as good as they look! They are inexpensive to make and took me under 20 minutes (if I don’t have to take pictures ;p).  I made two versions, the first version comes with luxuriously thick chunks of scrambled egg, resembling the type of spam sandwiches served at Hong Kong tea cafe (茶餐厅).

The second version of the luncheon meat egg sandwich simply replaces the scrambled egg with a fried egg and a sliced cheese which makes this sandwich doubly sinful and delicious.

I’m using the Ma Ling brand of luncheon meat which comes in a round tin. Cut 1 large round slice per sandwich so that each slice fills up the bread. I’m making two sandwiches so I only needed two slices. I’m keeping the rest of the luncheon meat for an upcoming recipe.

Note: If you are using Spam or other brands which comes in a rectangular tin, position the spam block upright (the bigger surface area) so that you get one large slice that can fill up the slice of bread.

Grease a non-stick pan with a few drops of oil. Pan fry the luncheon meat slices on both sides until lightly browned. Set aside.

Without cleaning the pan, make scrambled eggs. Add butter and eggs into the pan. Turn on the heat to medium and whisk the eggs in the pan. Scramble the eggs until just set but still moist, taking them off the heat now and then to avoid overcooking the eggs.

You can check out this recipe to make luxuriously perfect scrambled eggs. Set aside the scrambled eggs. Note: I failed to take photos of making the scrambled eggs as the heat control & timing are important and I was alone :P

Prepare all the above ingredients to make the sandwich: spreadable butter, bread slices, lettuce, tomato slices. Along with the previously fried luncheon meat and scrambled eggs.

Assemble each sandwich in this order: 1 slice of fried luncheon meat, 1 slice of tomato, 1 lettuce leaf, half the scrambled eggs & black pepper.

Then close up the sandwich with another slice of buttered bread.

Version 2: Made with fried egg and sliced cheese.

Grease the pan and make a sunny side fried egg (pictured above). I prefer the yolk to be set but not overcooked, so I made an “over-easy” egg by flipping over the sunny egg to rest for about 8 seconds on the hot pan. Let the egg stay longer in the pan if you want the yolk to be fully cooked.

This step improves the presentation of the sandwich but it is optional.

Luncheon Meat Egg Sandwich Recipe

This recipe makes 2 sandwiches. You can multiply the ingredients accordingly to make more sandwiches.

Ingredients:

Version 1: Luncheon Meat Sandwich with Scrambled Eggs

  • few drops + 1/2 tsp cooking oil divided
  • 2 large slices luncheon meat or spam see cooking note below
  • 15g unsalted butter cubed
  • 2 large slices tomato
  • 4 slices bread spread one side of each slice with butter
  • 2 lettuce leaves
  • 3 eggs
  • freshly cracked black pepper

Variant version with fried egg & cheese

  • 2 eggs (instead of 3)
  • 2 slices cheese (cheddar)

You also need:

  • a non-stick pan and a silicon/wooden spatula
  • food-grade cling wrap

Directions:

  1. Pan fry luncheon meat. Grease non-stick pan with a few drops of oil, and pan fry luncheon meat slices on both sides until lightly browned. Side aside.
  2. Make scrambled eggs. Don’t wash the pan. If there are any crisp bits, just remove them with a spatula. Grease the pan with 1/2 tsp oil, then add butter and 3 eggs. Whisk the eggs in a non-stick pan and scramble the eggs until just set but still moist, taking them off the heat now and then to avoid overcooking the eggs. Set aside the scrambled eggs.
  3. Assemble each sandwich in this order: 1 slice of buttered bread, 1 slice of fried luncheon meat (spam), 1 slice of tomato, 1 lettuce leaf, half the scrambled eggs, freshly cracked black pepper and lastly another slice of buttered bread.
  4. To serve, wrap sandwiches tightly with cling wrap. Then cut each sandwich in half (either to rectangles or triangles).

Variant with fried egg & cheese

Cooking Note(s):

  1. I’m using a round tin of luncheon meat so I cut each slice to large rounds. If using spam (rectangular tin), position the spam block upright for one large slice that can fill up the bread.
  2. You can also toast the bread if you have a sandwich maker. In that case, you won’t need to cling wrap the sandwich before cutting.

  4. You can replace butter with mayonnaise or any other bread spread that you like.
