10-Minute Heirloom Tomato Salad

This is a 10-minute heirloom tomato salad with basil sprouts & feta cheese. This recipe was my first time buying heirloom tomatoes. I was really excited to see a neighbourhood supermarket (Sheng Siong) selling heirloom tomatoes by weight at an affordable price so I bought the tomatoes to try right away. I was really happy with the results – not only were heirloom tomatoes sweet & tasty, they were also so, so pretty in their multi-colours. This makes a great side dish for sharing on the dining table, or a low-carb light meal for one.

I picked red, orange, yellow and green tomatoes. The supermarket ran out of the dark chocolate heirloom tomatoes, so this weekend I will try to go earlier to get more varied colours to make more salads.

Heirloom Tomatoes in 4 Colours
Since I am making this as a small appetizer salad for two, I used four smaller heirloom tomatoes.

Cutting Heirloom Tomatoes
Cut the heirloom tomatoes to similar-sized chunks.

Making Heirloom Tomato Salad
In a bowl, add cut tomatoes with shredded basil (I’m using basil sprouts), balsamic vinegar & olive oil.

Transfer to a salad serving bowl and garnish with crumbled feta cheese. This 10-minute healthy & colourful salad is ready!

10-Minute Heirloom Tomato Salad Recipe

For best results, buy heirloom tomatoes in different colours so that this salad looks colourful & cheery.

This makes a great side dish for sharing on the dining table, or a low-carb light meal for one.

Ingredients:

  • 250g heirloom tomatoes cut to bite-sized pieces; see cooking note
  • 1/2 tbsp balsamic vinegar
  • 1 tbsp extra-virgin olive oil
  • 2 basil leaves thinly shredded (or 1 tbsp basil sprouts/micro greens)
  • 1 tbsp crumbled feta cheese

 

Directions:

Add all the ingredients except feta cheese in a bowl. Mix well. Plate the salad, garnish with feta cheese and serve.

Cooking Note(s):

  1. As heirloom tomatoes come in different shapes and sizes, adjust the number of cuts for each tomato accordingly.
  2. You can substitute basil with any micro greens. I happened to use basil sprouts on this particular day, because I bought a new pot of supermarket basil that came with many baby sprouts.
  3. You can substitute your favourite tomatoes (any variety) for the heirloom tomatoes.
