This tuna pasta is my to-go meal whenever the pantry is low on fresh foods. It is filling on its own and can also be used for lunch box or picnic food.
The main ingredients, canned tuna and pasta, are dried foods. The rest of the ingredients are everyday pantry items – onion, frozen peas, mayonnaise, mustard, salt and pepper. It is also quick to whip up (only 15 minutes) and can be prepared up to a day in advance and chilled.
If making the pasta in advance, I usually cook the macaroni and frozen vegetables first, then store them in covered food containers in the fridge. When ready to serve, just toss everything together, so that the pasta tastes fresh and moist. You can also add a finely chopped hard-boiled egg for a richer taste.
