Steamed Three Eggs with Pork

Steamed three eggs (hen’s egg, century egg and salted egg) with pork is a savoury and homely steamed egg dish. I like to eat it with porridge. It is the meat version of the three colour eggs recipe. The layer of minced meat at the bottom complements the eggs well.

Steamed Three Eggs with Pork Recipe

To test if the egg is cooked, shake the dish slightly – the egg should feel solid. If you poke a bamboo skewer in the middle of the egg, the egg should be solid not liquid.

Ingredients:

  • 80 grams minced pork (chicken)
  • 2 hen’s eggs
  • 1 raw salted egg yolk diced
  • 1 century egg diced
  • 100 ml chicken stock

(A) Marinade for pork

  • 1/2 tsp light soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp Chinese wine
  • 3 dashes of white pepper powder
  • 1/2 tbsp corn starch

Directions:

  1. Marinade pork with (A) for at least 10 minutes.
  2. Beat eggs in a bowl. Strain the mixture through a fine sieve for 1-3 times. Add chicken stock and mix well.
    Spread the marinated pork in a thin layer in a steaming plate. Steam for high heat for about 3 minutes. Carefully tilt the plate and pour away the water collected in the steaming dish.
  3. Scatter chopped salted egg yolk and century eggs over the dish and pour egg mixture over the steamed pork. Steam for 8-10 mins until the egg is just set.
