Every Friday night, I love to mix my own alcoholic drinks to unwind and relax. It’s my way to celebrate surviving another week plus I know I can sleep in late the next day :P A Friday happy hour motivates me on weekdays, and also gives a chance to feature some of my favourite alcoholic drinks recipes on the blog.
Making pineapple soju is too, too simple especially if you’re a cheater like me. All you need is pineapple juice and unflavoured soju. For the pineapple juice, you can prepare it freshly squeezed. But if you’re lazy like me, just get canned pure pineapple juice (pictured above) from the supermarket. Do make sure that it is truly 100% pure pineapple juice by checking the list of ingredients on the label as I have seen a few “pure” fruit juice with sugar added.
Most commonly, the ratio for pineapple soju is equal parts chilled soju and pineapple juice, but you can use any higher/lower soju concentration as desired. Garnish with a slice of Thai lime to give it a subtle and clean citrus taste which complements the sweet pineapple juice.

When buying the pineapple, let it sit vertically on a flat surface to make sure it does not roll off. Then chop off the top part of the pineapple (see picture above). You can keep the top as a pineapple “hat” deco, but I discarded mine since it came sold at the supermarket with the leaves chopped off.
Using a sharp knife, go around the edge of the pineapple without cutting all the way through to the bottom.
Then make a few diagonal slits as shown above. Similarly to the step above, do not cut too deep when nearing the bottom.
Using a spoon, gently wiggle and pry out the pineapple flesh. You can use the flesh to make freshly squeezed pineapple juice, eat them on its own, or add a few pieces to your soju.
Your pineapple mug is now ready. You can decorate it with a summer umbrella like what I did, edible flowers or toothpick-skewered fruits. Enjoy your well-deserved happy hour with pineapple soju :D

If your soju and pineapple juice are not chilled, add ice cubes to the pitcher before mixing the drink.
If you’re using canned pineapple juice, shake the can well before using. In a serving glass pitcher or pineapple mug, pour equal parts chilled soju and pineapple juice (or any higher/lower soju concentration as desired). Garnish with a slice of lime.
