
Ingredients
(Serves 2)
Chicken breast fillets, 200g
1 1/2 tbsp honey
1/2 tsp light soy sauce
1 tbsp chopped rosemary
1 tbsp chopped basil
1 tbsp garlic
grated blackpepper corns
2 tbsp olive oil
Topping:
1 avocado, cut to small chunks
1 tomato, cut to small chunks
Directions
In a bowl, mix the honey and light soy sauce and marinate the meat in the bowl for about half an hour on each side. Lay the marinated meat on a plate and smear a small amount of rosemary, basil and garlic on each side. Sprinkle the grated blackpepper corns according to taste (I like mine really peppery so I put a lot more). Flip to the other side and do the same. Heat oil in pan and fry the fillets till cooked. Cut both the avocado and tomato to small chunks and mix in a small side dish. Top the chicken fillets with the avocado+tomato mix and serve.
Note to self: try grilling next time

Another fruity recipe … Here’s 3 of my fave foods in one dish! So Heavenly! And I love french beans that’s drenched in oil, another sinful pleasure of mine… hehee…
French Beans with Pine Nuts and Mangoes
Adapted from Kalyn’s Kitchen

Ingredients
(Serves 2)
200g french beans, ends trimmed and cut to 2 inch length
1 mango, cut to small chucks
2 tbsp pine nuts
1 tbsp chopped garlic
1 tbsp olive oil
Salt (optional)
Directions
Microwave the french beans at high heat for 2 minutes. In an dry pan, toast pine nuts over high heat for a few minutes till slightly browned and set aside (Note: It takes very little time for the french beans to go from lightly toasted to burnt… so be quick to take them out of the pan as soon as possible). Heat wok and stir fry garlic till light brown. Add the beans and stir fry till they are cooked. Add salt to taste if required. Turn off the fire. Stir in the toasted pine nuts and mangoes to mix thoroughly in the beans and oil. Serve.

I’ve always love using fruits in cooking and I know I must try out this recipe when I see it. And it turns out to be one of the most tasty and refreshing soup I’ve had! The natural sweetness of the soup is pure bliss… I’ll definitely experiment more with adding apples to soup in future ;p
Apple Soup
Recipe from Dinner for the Couple

Ingredients
(Serves 2-3)
1.5 litres water
200-300g spare ribs or pork shoulder ribs
1 onion, peeled & cut into chunks
4 red apples, cut into pieces
6 red dates
Salt
Directions
Blanch the pork ribs. Boil water in a pot and put in the ribs, onions, apples and red dates. Bring to boil again and turn to low heat. Simmer for 2 hours (I simmered for about an hour and keep it in thermal cooker for a few more hours). Season with salt if required.
