Basic Vanilla Cupcake Recipe

Basic Vanilla Cupcakes

With this basic and easy cupcake recipe, you can play around with all types of decoration and topping to make different themed cupcakes.

Ingredients:

  • 110 grams unsalted butter cut to small cubes and melted at room temperature
  • 110 grams caster or super fine sugar sifted
  • 110 grams self-raising flour sifted
  • 1/2 tsp baking powder sifted
  • 2 eggs
  • 1/2 tsp vanilla extract

Directions:

  1. Place all the ingredients in a medium bowl and beat with an electric whisk until smooth, about 2-3 minutes on medium speed.
  2. Place baking cases in muffin tins. Spoon the mixture into the cases (about half filled).
  3. Bake in preheated oven of 175°C (350°F) for about 20 minutes, until the top just turn golden brown.
  4. Remove the tins from oven and cool for 5 minutes, then remove the cupcakes and cool on a wire rack.

Noob Cook Tips

  1. If you have vanilla sugar, use half caster sugar and half vanilla sugar for an enhanced vanilla flavour.
  2. Store for a day in an airtight container. Freeze undecorated cupcakes in ziplock bags and whenever you need a cupcake or two, toast them for a few minutes in the oven till they are warm.

  4. I tried to bake these cupcakes but the top burnt and the inside was still gooey. Is it because I have to completely melt the butter?

    • Sorry I have not use an airfryer to bake muffins before, though I know it has been (can be) done. Perhaps you can google the corresponding temperature & timing for baking muffins in an airfryer.
